Juiced!

Several weeks ago, one of my star video clients and good friends, Dr. Robin Saraswati Marcus, showed up to an edit session on her upcoming DVD series, Nourishing Life Fertility Yoga featuring the Eggs!  Saraswati is an internationally respected Chinese Medicine Doctor and teacher.  last year she hired Reel Change Films to produce a series of yoga DVDs in which she merges yoga and Chinese Medicine to promote fertility – a practice with which she’s been very successful over the years.  But I digress.  The important thing is that she was glowing with enthusiasm and wielding a bottle of green liquid.

“Have you seen the movie Fat, Sick and Nearly Dead?” she asked, ”It’s pretty inspiring.  I was inspired just seeing her so full of zest!  This Australian documentary centers around a man who saved his own life and then the lives of others by getting serious about juicing.  Without even seeing the documentary, I was sparked enough myself to start juicing and since we happen to own (and never use) a top-of-the-line juicer (thanks to Georgia’s brother who was ahead of the trend — or at least ahead of me!) I went out and bought a bunch of random vegetables and ran them through this rather sleek looking monster of stainless steel.

Juicing is amazing and if you haven’t tried it, I’d like to personally recommend that you do.  It takes a little time each day, but it’s so worth it that the ritual boarders on meditative.   (more…)

Summer Smoothie – Strawberry, Spinach, and Mint

We’ve had a lot of rain here in the mountains lately, but the humidity continues to linger despite the low temperatures we’ve had.  Fortunately for me my mint plant has been loving it.  It is the most refreshing herbal addition to almost any smoothie I have whipped up, and it’s cooling qualities are just what I need after working in the garden or going for a bike ride in the neighborhood.

This smoothie is also an excellent way to throw another cup of spinach into your daily diet.  I have been on a banana smoothie rampage, which is also a fantastic way to add in your greens with a fruity taste, but substituted the strawberries when I had run out of them.  The spinach and mint compliment each other well.

- 4 or 5 frozen strawberries

- sprig of mint leaves

- handful of spinach

- 2 T. hemp seeds

- pinch of honey, agave, or stevia (optional)

- 1/2 c. Banana & Strawberry Jamba Juice, or coconut water works just fine

- 3 T. Greek yogurt

Blend together, and enjoy!

Paneer Whip

Everybody loves a good dip, that’s for sure.  On hot summer days there is nothing better, along with some fresh in-season fruit.  Replace the Cool Whip with this whipped paneer dip and you’ll be just as satisfied.  This is a great recipe that we found in the Himalayan Institute June-July newsletter, and we couldn’t help but share it!

 

3 cups paneer, crumbled

1-1/4 whey or milk

sweetener for taste (e.g. sugar, maple syrup, honey, agave)

 

Combine all ingredients in a food processor to your chosen consistency.  Let chill in the refrigerator for at least an hour, then enjoy!

 

Beet, Apple, and Mint Juice

Summer is heating up quickly here in the beautiful mountains of Western North Carolina!

One of our favorite ways to beat the heat is with a freshly made glass of juice.

I prefer this one in the afternoon when the sun is hottest and I could go for something sweet and refreshing.

If your body isn’t used to eating beets on the reg, you may want to stick to just a small glass of this one at first.  Let your system build a tolerance to it.

- 1 small beet, scrubbed and chopped

- 1 green apple, cored and chopped

- 5 carrots (a note: this will determine how sweet your juice will be, and I found that with this amount it was just slightly sweet)

- A handful of mint

- Small slice of lemon

Juice it all together and that’s that!  The beets are packed with antioxidants, so in my mind this really is just the right snack after a hot afternoon in the garden, pre- or post-workout, or just because you feel like it.

Healthy and Raw Broccoli Salad with Cashew Dressing

Sadly the word salad does not necessarily equal healthy; potato salad, pasta salad, and what I find myself craving the most… broccoli salad.  It is the evil mayonnaise that always brings down the nutrition factors, but man, is it good.  What is seemingly better, however, are the easy and accessible substitutes for it.

Luckily I found the most amazing recipe with just the right substitutes to make an absolutely killer broccoli salad.  I try and incorporate at least one meal of raw food into my diet a day, with the help of an awesome blog Rawmazing that has guided me along this path.  Instead of mayonnaise she chooses a cashew dressing sweetened with a bit of raw agave.  Along with a bountiful amount of broccoli she throws in cashews, raisins, and red onion.

This recipe alone is wonderful.  When I made it I didn’t have raisins on hand and instead threw in goji berries and it was positively magical.  I also added some apple cider vinegar into the dressing for a bit of added zing, but that’s just me.

Quinoa Salad with Baked Marinated Tofu

Four Servings – Egg & Dairy Free

Here’s a light grain salad with a wonderfully tangy flavor. For a convenient substitute, you can buy prepared baked marinated tofu for this recipe. To toast almonds, bake them at 350 degrees F. for about 15 minutes; cool.
